做法:春(chūn )笋切成片(piàn )后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮(zhǔ )到水(shuǐ )快熬(áo )干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖(mèn )。
