做法(fǎ ):春笋切成片后加少许盐捞出(chū )后用(yòng )清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转中火(huǒ )。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖上(shàng )锅盖焖。
