做法:春笋切成(chéng )片后(hòu )加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒(dǎo )入2勺油(yóu ),放入(rù )生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋,盖(gài )上锅盖大(dà )火(huǒ )煮开后转中(zhōng )火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
