做法(fǎ ):春笋切成片后加少许盐捞出(chū )后用(yòng )清水浸泡(pào ),生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春(chūn )笋(sǔn ),盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到(dào )水快熬(áo )干的时候加入盐(yán ),翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
