做(zuò )法:春笋切成片后(hòu )加少(shǎo )许盐捞(lāo )出(chū )后用清水浸(jìn )泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大(dà )火(huǒ )煮开后转(zhuǎn )中火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
