做法(fǎ ):春笋切成片(piàn )后加少许盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少(shǎo )量(liàng )清水半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
