做法:春笋切(qiē )成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖焖。
