做法:春笋切成片后加少许盐(yán )捞出后(hòu )用(yòng )清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻(fān )炒均匀(yún ),加(jiā )入少(shǎo )量(liàng )清水半(bàn )掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅(guō )盖焖。
