做法:春笋切成(chéng )片后加少许盐捞(lāo )出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清(qīng )水半掩(yǎn )住春(chūn )笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
