做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半(bàn )掩住(zhù )春(chūn )笋,盖(gài )上锅盖大火煮开后(hòu )转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
