做(zuò )法:春笋切(qiē )成片后加少(shǎo )许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧热(rè ),倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右(yòu )。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖(gài )焖。
