做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量(liàng )清水半掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖。
