做法:春笋切(qiē )成片后加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住春(chūn )笋,盖上(shàng )锅(guō )盖大火煮开后(hòu )转中火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
