做法:春笋(sǔn )切成片(piàn )后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住春笋(sǔn ),盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
