做法:春笋(sǔn )切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒(dǎo )入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
