做法:春笋切成片后加少许盐捞出(chū )后用(yòng )清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干(gàn )的时候加入(rù )盐,翻(fān )炒(chǎo )均(jun1 )匀稍(shāo )收汁(zhī )时盖(gài )上锅盖焖。
