做法:春笋切(qiē )成片后加(jiā )少许盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再(zài )加(jiā )入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀(yún ),加入少量清(qīng )水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐(yán ),翻(fān )炒均匀稍收汁时盖上锅盖焖。
