做法:春笋切成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡(pào ),生姜切片(piàn ),葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转(zhuǎn )中(zhōng )火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上(shàng )锅盖焖。
