做(zuò )法:春笋(sǔn )切成片后(hòu )加少许盐捞出(chū )后用清水浸(jìn )泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右(yòu )。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上(shàng )锅盖焖。
