做法:春笋切成片后加少(shǎo )许(xǔ )盐(yán )捞出后(hòu )用清水浸泡(pào ),生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入(rù )2勺(sháo )油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻(fān )炒1分钟左(zuǒ )右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
