做法:春笋切(qiē )成片后加少许盐捞出(chū )后(hòu )用(yòng )清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水快熬干的时(shí )候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅盖(gài )焖。
