做法:春笋切成(chéng )片后加少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅(guō )烧热(rè ),倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
