做法:春笋切成片后加(jiā )少许盐捞出(chū )后用清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟(zhōng )左右(yòu )。再(zài )加(jiā )入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖(gài )焖。
