做法:春笋(sǔn )切成(chéng )片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖(gài )焖。
