做(zuò )法:春笋切(qiē )成(chéng )片后加少许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅(guō )烧热(rè ),倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少量清水半掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均(jun1 )匀稍收汁时(shí )盖(gài )上锅盖焖。
