做法:春(chūn )笋(sǔn )切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖(gài )大火煮开后转中(zhōng )火(huǒ )。煮到水快熬(áo )干的时候加入盐(yán ),翻炒均匀稍收(shōu )汁(zhī )时盖上锅(guō )盖焖。
