做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油(yóu )翻炒均匀,加(jiā )入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快(kuài )熬(áo )干的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时(shí )盖上(shàng )锅盖(gài )焖。
