做法:春笋(sǔn )切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀(yún )稍收汁时盖(gài )上锅盖焖(mèn )。
