做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再(zài )加入生抽(chōu )、老抽、蚝油(yóu )翻炒均(jun1 )匀(yún ),加入少量清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬(áo )干的时(shí )候加入盐(yán ),翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖。
