做法:春(chūn )笋切成片(piàn )后(hòu )加(jiā )少许盐(yán )捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清水半掩住(zhù )春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬(áo )干的(de )时候加入盐(yán ),翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖(mèn )。
