做法:春(chūn )笋切成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左(zuǒ )右(yòu )。再加入(rù )生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖上锅盖(gài )焖。
