做法:春笋切成片后(hòu )加少许盐捞(lāo )出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量(liàng )清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干(gàn )的时候加(jiā )入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
