做(zuò )法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒(chǎo )均(jun1 )匀,加入少量清(qīng )水半掩(yǎn )住春笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的(de )时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖(mèn )。
