做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春(chūn )笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后(hòu )转中火。煮到水(shuǐ )快熬干的时候加(jiā )入(rù )盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
