做(zuò )法:春笋(sǔn )切成(chéng )片后加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左(zuǒ )右(yòu )。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮(zhǔ )到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖(gài )焖。
