做法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽(chōu )、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快(kuài )熬干的时候(hòu )加入(rù )盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖(mèn )。
