做法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清(qīng )水浸泡(pào ),生姜切(qiē )片,葱切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒(chǎo )均(jun1 )匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的(de )时(shí )候加入(rù )盐(yán ),翻炒(chǎo )均(jun1 )匀稍(shāo )收汁时盖上(shàng )锅盖焖。
