做法:春笋切成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清(qīng )水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时(shí )候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅盖焖。
