做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻(fān )炒(chǎo )均(jun1 )匀(yún ),加(jiā )入(rù )少量清(qīng )水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖焖。
