做(zuò )法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热(rè ),倒(dǎo )入2勺(sháo )油,放入生姜、春(chūn )笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀(yún ),加入少量清水半掩住春(chūn )笋(sǔn ),盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
