做法:春笋(sǔn )切成片后(hòu )加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入(rù )盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
