做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清(qīng )水(shuǐ )浸泡,生(shēng )姜切片(piàn ),葱(cōng )切成(chéng )段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入(rù )生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
