做法:春(chūn )笋切成片后加少许盐捞(lāo )出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少(shǎo )量清水半(bàn )掩住春笋,盖(gài )上锅盖(gài )大火煮开后转中(zhōng )火(huǒ )。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍(shāo )收汁(zhī )时盖上锅盖焖。
