做法:春笋(sǔn )切(qiē )成片后(hòu )加少(shǎo )许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右(yòu )。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
