做法:春笋切成片后(hòu )加少许盐捞出后用(yòng )清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖(mèn )。
