做(zuò )法:春笋切成片后加少(shǎo )许盐(yán )捞出(chū )后用(yòng )清(qīng )水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖焖。
