做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半(bàn )掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干的(de )时(shí )候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖。
