做法:春笋切成(chéng )片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段(duàn )翻炒1分钟左右。再加入(rù )生(shēng )抽(chōu )、老抽、蚝油翻(fān )炒(chǎo )均(jun1 )匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
